Meal Prep Monday!

Good Morning!

Wow life has gotten away from me. I fully intended to have a post every week, but unfortunately that just didn't happen.

Today I wanted to focus on making meals ahead of time.

For some people, like me, with SUPER busy schedules. It has become vital to make sure we have food in the fridge ready to eat. I have a tendency to get lazy when I have to actually put food together, especially when I'm hungry. So, I have started to make simple meals ahead of time to save time, energy, and to decrease bad nutrition decisions due to laziness.

Their are 3 types of meals that I prep ahead. I don't prep everything for the week. For as long as I am on Maternity leave I will have a little extra time to prep and cook dinner every day.

Toddler meals are always evolving. My boys are VERY picky and they have a tendency to change what they like to eat on an hourly bases. Which is hard to plan ahead for. However, their are a few items they have consistently eaten.

My kiddos LOVE: Turkey meatballs, hotdogs, yogurt, cheese, crackers, pasta, ham, carrot sticks, peas, peanut butter, jam, toast and any type of fruit. So I tend to stick to these items when making their meals.

I only make 3 days worth of lunches, just in case we share a lunch. I use Rubbermaid's compartment containers to pack the boys lunches in.

I like to stick to one of each food group for the planned meals. For example I will pack hardboiled egg, a cheese stick, fruit, and crackers. I usually stick to Yogurt for a morning snack and crackers or carrots for the afternoon snack. For these I prep them in snack sized bags and have them in the fridge or pantry for when he needs them. We keep them on a low shelf so my oldest can grab them himself.

I like the idea of him making a choice of what he wants, out of all the healthy options we have in the house.
