I don't know about you but I am ADDICTED to clean eating. Why buy it if I can make it? am I right?
Anyways, we don't eat a whole lot of mayo but when we do want it for sandwiches or on fish (a bit of a guilty pleasure) we make our own. Its actually REALLY easy.
Mason Jar Mayo
1 whole egg 1 Cup Oil (needs to be liquid a room temp) 1 tsp Lemon Juice 1/2 tsp salt
Add all the ingredients into a wide mouth mason jar. Let sit for a few minutes so all the ingredients settle. When it looks all pretty and layered slowly blend with an immersion blender, pulling up as you go so all the oil is mixed. Thats it, thats all! It is super simple and no added preservatives.
Its also really easy to add in any other flavours at this point. I add a bunch of garlic and some anchovy paste to make a simple caesar dressing
If you want something a little more sophisticated try adding in some Brassica mustard. My ALL TIME favourite! They also come in different flavours. I recommend the cranberry mustard to make an AMAZING dressing for Turkey or Chicken Salad. Added bonus, they are made locally here in Alberta!
